Lemon Bars


1 1/2 cups all-purpose flour
2/3 cup powdered sugar
3/4 cup butter, softened
4 eggs
1 3/4 cups white sugar
1/4 cup plus 2 TBS all-purpose flour
1 1/8 cup lemon juice
yellow food coloring
a couple TBS powdered sugar for decoration

1. Preheat oven to 350 degrees, grease 9x13 pan

2. Combine the flour, 2/3 cup powdered sugar, and butter. Pat dough into prepared pan. Bake for 20 minutes.

Whisk together eggs, white sugar, flour, and lemon juice until frothy. Add a few drops of yellow food coloring. Pour this lemon mixture over the crust.

Return to the preheated oven for 25 to 30 minutes, or until light golden brown. Cool on a wire rack. Dust the top with powdered sugar.
