Patricia's Zucchini Bread

3 eggs
1 c. veg oil
2 c. sugar
2 c. grated zucchini
1 tsp. vanilla
3 c. all purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon (I also add a little nutmeg)
1/2 c. chopped nuts (optional)

Preheat oven to 350. Beat eggs and oil until foamy. Add sugar, vanilla, and zucchini and mix well. Add dry ingredients and nuts. Mix well. Pour into 2 greased loaf pans. Bake for 45 minutes to an hour (mine always takes closer to an hour, but I guess it depends on your oven.) This bread is really moist and good! The recipe says it freezes well, but I haven't ever frozen it. I have made it a ton lately since the zucchini in my garden have gone out of control. I also read that you can grate and freeze zucchini to use in bread later.

No Bake Cookies

1/2 Cup Milk
1 Stick Butter
2 Cups Sugar
1/4 Cup Cocoa
Melt Butter over low heat. Add remaining ingredients and increase heat to medium. At the first sign of bubbles, set the timer for 45 seconds.
After 45 seconds, remove from heat.
Add:
1 Cup Peanut Butter
3 Cups Quick Oats
1 Teaspoon Vanilla
Drop by spoonfuls onto wax paper. Cool and Enjoy!
